This spring, Brasserie Baroche puts pâté in the crust in the spotlight. Chef David Baroche has invited chefs Denny Imbroisi, Nicolas Sale, Alan Geaam and Julien Serri to create with him new recipes for four-handed pies. Pie recipes to be found successively on the menu of Brasserie Baroche from 23 April to 01 June 2022.

David Baroche, the chef of the Brasserie Baroche, affordable restaurant located not far from the Champs-Élysées where you can taste the famous pâté en crust of the chef, invited his friends cooks for a real festival of pies. Thus the chefs Nicolas Sale, Denny Imbroisi, Alan Geaam and Julien Serri accepted the invitation of David Baroche to create, with 4 hands with him, new recipes of pies, inspired by history and everyones tastes. Also, for 8 weeks, from 15 April to 19 June 2022, the Brasserie Baroche therefore offers original recipes of pâtés in crust, created with 4 hands.

Each chef sees his creation offered on the menu of the Brasserie Baroche for 2 weeks before giving way to another recipe.

  • Of 25 April to May 8 2022: the pie of Nicolas Sale and David Baroche
Nicolas Sale, former starred chef at the Ritz, offers the most traditional of the four pâté en croute recipes. It combines farm pig with pigeon, in a pâté en croute also containing candied figs. All served with grape pulp with Brive mustard. A classic recipe but very effective and very tasty, especially thanks to the foie gras which reminds us of Christmas.

    • From 9 to 25 may 2022: the pâté en croute by Julien Serri and David Baroche
    • Pâtés en croûte de chefs à la Brasserie Baroche The chef pizzaiolo from Magnà is inspired by Italian charcuterie, which he uses on his pizzas, for his pâté en croute which he imagined as a bologna. A pâté on the shoulder of free-range pig, with smoked bacon, black pepper and pistachio, served with vegetables and pickled lemons. A recipe that reconciles us with mortadella.

      The starred chef of Lebanese origin, Alan Geaam, draws inspiration from veal kafta for his pâté en croute . A pâté with veal, spinach, trumpets of death , served with sumac vegetable pickles and pomegranate molasses vinaigrette. The most subtle recipe of the four, the veal being less strong in taste than the pork.

      • From 6 to 19 June 2022: the pie by Denny Imbroisi and David Baroche
      The Italian chef passed by Pâtés en croûte de chefs à la Brasserie BarocheTop Chef in 2022 draws inspiration from his native Italy for his pâté en croute which mixes pig and poultry with candied lemons. Served with a tapenade of green olives with basil, pickles of Tropea red onions with white balsamic vinegar. Our favorite recipe: the densest and richest, in meat and in taste, of course, but refreshed by lemon.
